Does signaling for XYM lock coins?

if you opt in and signal for XYM do you lock XEM coins in any way at that point

No

It just flags the account to be included in the snapshot for launch.

You will need your tokens in that account at the snapshot block height but can move them around freely as you like (its different to eth 2.0 contract in that respecrmt, pretty similar concept otherwise though)
