I’m not familiar with IOS but probably you should login into icloud (https://www.icloud.com/ ?) and search there if they are backuped data which can you restore from time before app reinstall.

No. Transactions in each blockchain are irreparable. If transaction is done in blockchain it can’t be reversed. That’s how all blockchains work (BTC, ETH and so on).
