Spending my XEM?

Hi, If I am to improve my PoI score I need to actually use my XEM rather than just sitting on it all right? What can I spend it on or use it for? Is there a resource that you point me towards that lists the places that will accept XEM? And what else can I do to improve PoI? Thanks.
